Bûche au Café or Bûche aux Framboises
Sheets of genoise (sponge cake) are spread with a thin layer of ganache; then spread with a layer of raspberry mousse or espresso mousse. It is rolled up and trimmed to look like a festive yule log. The raspberry is finished in Chambord buttercream and the espresso in chocolate buttercream. Serves 10-12.
Zuppa Englese Torte
Beginning and ending in chocolate, this cake has layers of vanilla Bavarian cream studded with brandied cherries and the surprising crunch of Valrhona chocolate pearls. The Zuppe Englese Torte is zuper, zensational, zo zweet, and satisfying. Serves up to 16.

Gingerbread Caramel and Toffee Torte
Caramel toffee buttercream between moist layers of our Stout gingerbread cake layers & topped with caramel buttercream. Yes, we really use Guinness Stout and fresh ginger juice in this delicious dessert. 6" serves 6-8. 8" serves 10-12. 10" serves 12-16
This dome shaped dessert, often called the Charlotte Russe, has spirals of genoise and raspberry jam that surround a vanilla Bavarian cream. We include ruby red raspberry sauce to give each serving that extra “zing”. Serves up to 12.

Flourless Chocolate Cake
A favorite reinvented! We’ve combined Valrhona Caramélia milk chocolate with Cocoa Noel’s dark 64% chocolate. We put a bit of our own caramel under the dark chocolate ganache. It’s a smooth, creamy, caramely, delight. For those of you who don’t like change, the old version of our flourless with raspberry is still available in the individual dome size. 8" serves 10-12. 10" serves 16-20.

Pistachio Orange-Cranberry Torte
Whipped cream in between layers of pistachio cake with the center is layers of blood-orange bavarios and cranberry gelee. Just a bit of Grande Marnier buttercream puts it over the top! Half serves 4-5. Whole serves 8-10.
This is an Austrian tradition, and the smell of it baking tells us the holidays are here. A crust of ground almonds with cocoa, cinnamon cloves, lemon zest, is filled with the best raspberry preserves. The Linzer is great with a cup of coffee. This dessert travels well! Serves up to 12.

Bright red tart cherries that have only enough sugar added to keep you from puckering up too much. During the holidays we dress them in shortbread Christmas trees instead of the usual hearts. Comes in an individual size, 7" serves 6-8, 11" serves 10-12.
This Italian Christmas bread is more of a confection than a bread. It is filled with candied orange, candied lemon, brandied raisins, and vanilla beans. This bread is enriched with eggs, butter, and topped with a glaze of chocolate, raw sugar, and almonds.
